Hoppin' John
Hoppin' John is an moderately easy dinner. Made with 1 c. dried black-eyed peas, 1 qt. water, 2 tbsp. olive oil, divided, 1 c. coarsely chopped lean, cooked ham and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Sort and wash peas.
Place in a 6-quart pressure cooker.
Add water, 1 tablespoon oil and next four ingredients.
Stir well. Close lid securely to bring to high pressure over high heat, about 7 minutes.
Adjust heat to medium or level needed to maintain high pressure.
Cook 10 minutes.
Remove from heat and cool under cold running water.
Remove lid.
Drain mixture, reserving 2 cups cooking liquid.
Set aside.
