Hoppin' John
Hoppin' John is an moderately easy dinner. Made with 1 1/4 c. dry black-eyed peas, 4 c. fresh water, 1 1/2 c. chopped onion, 1 clove garlic, minced and 1 bay leaf, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Soak the peas overnight in a large pot of water (or boil them for 2 minutes; cover and let stand 1 hour).
Drain, then cover with 4 cups fresh water and bring to a boil. Add the onion, garlic, bay leaf, black pepper and cayenne.
Bring to a boil; cover and simmer 1 hour, stirring occasionally.
