Hominy
Hominy is an easy dinner. Made with 5 oz. lye, 6 qt. cold water, 5 qt. shelled corn and 5 tbsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Dissolve the lye in the cold water.
Stir in the shelled corn and let stand for 15 hours.
Drain off the lye water and put the corn in a sack.
Rub and wash it in the sack through running water. After the hulls are off the corn, take it out of the sack and cook for 3 or 4 hours or until tender.
Change the water 2 or 3 times while it is cooking.
