Quartered unpeeled potatoes shaken in seasoned flour with Parmesan, then baked in butter until crisp and golden. A side dish that drinks up the pan butter beautifully.

Combine flour, cheese, salt and pepper in a bag.
Soak potatoes in water; drain and coat well with flour mixture.
Melt butter in a 13 x 9-inch pan.
Place potatoes in pan.
Bake at 425Β° for 1 hour.
Turn potatoes one time during baking.
