Holiday Sweet Potato Cake
Holiday Sweet Potato Cake is an moderately easy dinner. Made with 1 1/2 c. wesson oil, 2 c. sugar, 4 eggs, separated, 4 tbsp. hot water and 2 1/2 c. sifted cake flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine oil and sugar; beat until smooth.
Add egg yolks; beat well.
Add hot water and dry ingredients which have been sifted together.
Stir in sweet potatoes, nuts and vanilla; beat well. Beat egg whites until stiff and fold into mixture.
Bake in 3 greased 8-inch layer pans at 350Β° for 25 or 30 minutes.
Cool completely before frosting with your choice of icing.
