Holiday Pecan Cake
Holiday Pecan Cake is an moderately easy dinner. Made with 2 c. margarine (soft), 4 1/2 c. flour, 1/4 tsp. salt, 1 tsp. baking powder and 6 eggs, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Sift together flour, salt and baking powder.
Grease bottom of 10-inch tube pan.
Separate eggs; beat yolks well.
Beat whites until stiff.
In large mixing bowl, cream together butter and sugar.
Add beaten egg yolks, mixing well.
Combine milk, vanilla and dissolved coffee.
Add alternately with dry ingredients.
Fold in egg whites and pecans.
Pour into pan and bake at 325Β° for 1 1/2 hours.
Let cool in pan.
