Holiday Fruit Cake
Holiday Fruit Cake is an impressive dinner. Made with 2 1/2 c. small raisins, 2 1/2 c. pitted dates, cut up, 2 c. large muscat raisins, 2 c. currants and 2 small jars candied pineapple, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Put raisins, dates, fruits, sugar, water and shortening in a large pot; bring to a boil, then simmer for 20 minutes.
Cool. Sift flour once before measuring.
Combine flour, soda, cinnamon, cloves and salt and sift together.
Stir into cool mixture, adding eggs and nuts last.
Pour into very well-greased and floured pan. Bake 1 1/2 hours at 325Β°.
