Holiday Eggnog
Holiday Eggnog is an moderately easy dinner. Made with 2 c. skim milk, 2 tbsp. cornstarch, 3 1/2 tsp. equal measure or 12 packets equal sweetener, 2 eggs, beaten and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix milk, cornstarch and Equal in a small saucepan; heat to boiling.
Boil, stirring constantly, 1 minute.
Mix about half the milk mixture into eggs; mix egg mixture into milk in saucepan. Cook over low heat until slightly thickened, 1 to 2 minutes, stirring constantly.
Remove from heat and stir in vanilla and cinnamon.
Cool to room temperature; refrigerate until chilled, or until serving time.
