Holiday Cheese Potatoes
Holiday Cheese Potatoes is an easy dinner. Made with 10 (approximately) cooked (boiled) potatoes, lightly salted, 3/4 lb. velveeta cheese, cubed in small pieces, 1/2 c. diced onion, 2 c. regular or light hellmann's mayonnaise (not salad dressing) and 1/2 lb. chopped, partly fried bacon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Drain potatoes.
While potatoes are still hot, add all ingredients, except bacon.
Stir with wooden spoon until of spreading consistency.
Pour into buttered 9 x 13-inch dish.
Top with crumbled bacon.
Bake at 325Β° for 1 hour or until bubbly and bacon is crisp.
Excellent for holiday dinners.
Can be made the day before, except for adding the bacon crumbles.
