Herring Dumplings
Herring Dumplings is an moderately easy dinner. Made with 4 good sized salt herring or 8 halves, remove skins or bones, 8 potatoes, enough to fill 3-quart saucepan when peeled and quartered, 1 c. cooked potatoes, 1 large onion and 2 c. wheat hearts or quick oatmeal, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Grind potatoes, herring and onions.
Add wheat hearts or oatmeal, thyme, pepper and baking powder.
Add flour enough to make stiff dough so balls hold their shape.
Drop dumplings into boiling water to which vinegar has been added.
Cook1/2 to 3/4 hour.
Cubes of salt pork may be put in center of balls.
Serve with melted bacon fat and fried bacon, or melted butter.
