Herbed Potatoes

Boil potatoes and slice 1/4-inch thick.
Slice onions 1/4-inch thick.
Layer 1/2 of the potatoes, onions and tomatoes.
Sprinkle with 1/2 each of salt, thyme and rosemary.
Repeat layers and seasonings.
Drizzle with oil, cover and bake 35 to 40 minutes at 425Β°.
Sprinkle with parsley before serving.
Serves 8.
