Herbed Potatoes
Herbed Potatoes is an moderately easy dinner. Made with 4 medium size baking potatoes, cut into 1/4-inch slices (1 1/2 lb.), 2 medium size white onions, cut into 1/4-inch slices (12 oz.), 5 plum tomatoes, sliced (1 lb.), 1/2 tsp. salt and 1 tsp. dry thyme, this recipe delivers authentic, satisfying flavors. Coat large baking dish with cooking spray.
Layer half each of potatoes, onion and tomatoes in dish; sprinkle with half of salt, thyme and rosemary.
Repeat layers and drizzle with the olive oil. Cover and bake at 425Β° for 35 to 40 minutes or tender.
Sprinkle with parsley.
(If no fresh parsley, sprinkle with 1 tablespoon dry crushed before baking.)
