Herb Tofu

Made with 1 (16 oz.) pkg. tofu, 4 tbsp. plain yogurt, 3 scallions, cut into 2-inch pieces, 1 c. parsley leaves, chopped and 1 pt. cherry tomatoes, cut in half and chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In blender or food processor, place tofu and yogurt.
