In a large pot, place hen; cover with water.

Add salt, pepper and whole onion.

Cook until tender.

When done, reserve liquid for broth to be used in dressing.

Break toast into small pieces; crumble cornbread.

Put celery and onions in saucepan.

Cover with water and cook until tender.

In large roasting pan, add toast and cornbread; pour in celery and onion mixture.

Stir in eggs, sage, salt, pepper and reserved hen broth.

Add more broth if needed for desired consistency.

Mix thoroughly.

Leave in roasting pan. Place hen on top of dressing.

Bake in preheated 350Β° oven for about 1 hour or until brown.

Serve with gravy of your choice.
