Heavenly Rice Pudding
Heavenly Rice Pudding is an moderately easy dinner. Made with 1/2 c. cold cooked rice, 1 1/2 c. diced marshmallows, 1/2 c. well-drained crushed pineapple, 1/4 c. chopped maraschino cherries and 1/4 c. chopped nuts, this recipe delivers authentic, satisfying flavors. Mix cold cooked rice, marshmallows, pineapple, cherries and nuts in a bowl.
Chill evaporated milk in refrigerator tray until soft ice crystals form around edges of tray (15 to 20 minutes). Whip until stiff (1 minute).
Add lemon juice; whip very stiff (2 minutes).
Beat in powdered sugar.
Fold whipped Carnation into rice mixture.
Spoon into serving dishes.
Makes 6 servings.
