Have Another Helping Squash
Have Another Helping Squash is an moderately easy dinner. Made with 4 slices bacon, 4 or more large yellow squash, sliced, 5 or 6 green onions, sliced, 1 egg, well beaten and 1/2 c. sour cream, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Fry bacon until crisp (drain, then crumble).
Saute squash and onions in bacon drippings (8 to 10 minutes).
Combine egg and sour cream, add to squash mixture, stir in bacon and cheese. Pour into shallow 2 quart casserole.
Bake at 350Β° for 20 minutes or until bubbly.
You may garnish with shredded cheese or a sprinkling of paprika.
