Harvest Cake
Harvest Cake is an moderately easy dinner. Made with 4 c. diced apples, 2 c. sugar, 3 c. flour, 1 c. cooking oil and 2 eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix apples and sugar together and let stand 1 hour.
Sift flour, soda, salt, cinnamon and nutmeg together.
Beat eggs and then add oil and vanilla.
Blend apple mixture with egg mixture. Add flour mixture to egg and apple mixture.
Stir in coconut, walnuts and cherries.
Bake 1 hour at 350Β° in a greased and floured tube pan.
After cake has cooled, remove from pan and top with confectioners sugar.
