Mix together apples and sugar; let stand 1 hour.
Sift together flour, soda and spices.
Beat eggs; add oil and vanilla. Add apple mixture.
Combine flour mixture with eggs.
Stir in walnuts.
Bake in a greased and floured angel food cake pan for 1 hour at 350Β° or until done.
Frost with plain white icing and top with a sprinkling of chopped nuts.
