Mix apples and sugar and let stand 1 hour.
Sift together the flour, soda, spices and salt.
Beat eggs; add oil and vanilla. Add apple mixture.
Add flour and spice mixture.
Mix until well blended.
Stir in nuts.
Add raisins, if desired.
Bake in greased and floured tube pan at 350Β° for 1 hour or until toothpick comes out clean.
