Harvest Cake
Harvest Cake is an moderately easy dinner. Made with 1 3/4 c. sugar, 3 eggs, 1 c. cooking oil, 2 c. all-purpose flour and 1 tsp. soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Blend together with wooden spoon the eggs, sugar and oil until oil is blended.
Sift flour, soda, cinnamon and salt.
Stir with spoon into egg mixture.
Do not overbeat.
Fold in diced apples and nuts.
Grease a 9 x 13-inch pan lightly.
Bake at 350Β° for 1 hour or until cake leaves side of pan.
When cold, sprinkle with powdered sugar.
