Harvest Bread
Harvest Bread is an impressive dinner. Made with 3 c. sugar, 3/4 c. shortening, 4 eggs, 2 c. mashed, cooked yams and 1 (6 oz.) can frozen orange juice concentrate, thawed, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Combine sugar, shortening and eggs in mixer bowl.
Beat until smooth.
Add yams and orange juice concentrate; mix well.
Mix flour, baking soda, cinnamon, nutmeg, allspice, cloves and salt together.
Add to batter, 1/3 at a time, mixing well after each addition.
Stir in pecans.
Spoon into 4 greased and floured coffee cans.
Bake at 350Β° for 40 to 45 minutes or until loaves test done.
Remove to wire rack to cool.
