Harvard Beets
Harvard Beets is an moderately easy dinner. Made with 1 (1 lb.) can sliced beets or 1 quart frozen beets, 2 tbsp. butter or margarine, 2 tbsp. flour, 1/4 c. beet liquid from can and 1/3 c. firmly packed brown sugar, this recipe delivers authentic, satisfying flavors. Drain beets; save 1/4 cup of the liquid.
Melt butter or margarine.
Blend in flour.
Add 1/4 cup beet liquid.
Cook stirring constantly, until thickened.
Add remaining ingredients and stir until sugar dissolves.
Add drained beets.
Heat to serving temperature.
Makes 6 servings.
