Harvard Beets
Harvard Beets is an moderately easy dinner. Made with 1 - 16 oz. can sliced beets, 1/4 c. sugar, 1 tbsp. cornstarch, 1/2 tsp. salt and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Drain beets; reserve liquid in 1 cup glass; pour beet liquid and add enough water to make 1 cup liquid.
In one quart microwaveable casserole dish or bowl, combine sugar, cornstarch, salt, pepper, and vinegar.
Stir in beet liquid; cook uncovered on high 2 1/2 to 3 minutes.
Stir occasionally until mixture thickens and is clear.
Add beets and stir lightly.
Cook covered on high about 5 minutes.
