Harvard Beets
Harvard Beets is an moderately easy dinner. Made with 3 c. beets, sliced, 1/2 c. cornstarch, 1/2 tsp. salt, 2 whole cloves and 1/2 c. cider vinegar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In double boiler mix sugar, cornstarch, salt, cloves and vinegar.
Stir until smooth.
Cook and stir until clear.
Add beets and leave over hot water about 30 minutes.
Just before serving, heat, but do not boil.
Add butter and marmalade.
