Harvard Beets
Harvard Beets is an moderately easy dinner. Made with 1 (16 oz.) can sliced beets, 1/4 c. sugar, 2 tbsp. vinegar, 1 tbsp. grated orange peel and 1 1/2 tsp. cornstarch, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Drain beets, reserving 2 tablespoons juice. Set beets and juice aside. In a saucepan, combine sugar and cornstarch.
Add vinegar, orange juice and beet juice. Bring to a boil.
Reduce heat and simmer for 3 to 4 minutes or until thickened.
Add beets and orange peel.
Heat through.
Yields 4 to 6 servings.
