Hamburger Hash
Hamburger Hash is an moderately easy dinner. Made with 1 lb. ground beef, 1 tsp. salt, 2 large onions, sliced thin, 1 or 2 tsp. chili powder and 1 large can tomato juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat oven to 350Β°.
In a large skillet, cook meat, onions and green pepper until meat is brown and vegetables are tender.
Drain off fat.
Put meat and vegetables in casserole dish (4 quart). Stir in tomatoes, rice, salt, chili powder, 1/2 of the can of tomatoes and tomato juice.
Use last 1/2 to keep rice moist during cooking; add as needed.
Cover and bake 1 hour.
