Ham Soufflé
Ham Soufflé is an moderately easy dinner. Made with 1 tbsp. oil, 1 c. minced mushrooms, 3 tbsp. butter, 2 tbsp. flour and 1 1/4 c. chicken broth, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute mushrooms in oil.
In heavy saucepan, melt 3 tablespoons butter.
Add flour; stir until smooth.
Gradually add broth.
Stir; bring to a boil.
Simmer for 5 minutes.
Stir occasionally.
Add pepper.
Beat yolks in small bowl; add some of hot mixture, whisking constantly.
Return yolk mixture to hot mixture, blending well.
Add mushrooms and ham, salt and pepper.
Set aside; cool 10 minutes.
Cook noodles al dente; drain.
Toss with 2 tablespoons melted butter.
