Guinea Garbage is an moderately easy dinner. Made with 4 red peppers, 4 green peppers, 4 onions (big, spanish), 16 oz. can tomato sauce and oregano to taste, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Slice peppers and onions, then saute them in a large skillet with a little oil.
Transfer when tender to a large pot.
Add one can of tomato sauce and the spices listed.
Let simmer after mixing well.
Cook the sausages and drain the fat.

Taste sauce and spice accordingly.
Serve on sub rolls.
