Guam Red Rice
Guam Red Rice is an moderately easy dinner. Made with 2 tbsp. achote seeds, 1/2 tsp. salt, 2 tbsp. cooking oil, 1/2 c. chopped onions and 2 c. water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Soak achote seeds in 1/2 cup of warm water for 30 minutes. Add salt.
Rub or press achote seeds to get color.
Strain liquid into small bowl.
Saute onions in oil.
Add rinsed rice to boiling achote-colored water.
Reduce heat to medium-high for 5 minutes or until water evaporates.
Reduce heat to low for 15 minutes. Yields 4 servings.
