Guacamole
Guacamole is an moderately easy dinner. Made with 1 tbsp. minced onion, 1/8 tsp. minced garlic, 1/2 tsp. lemon juice, 1/4 tsp. salt and fresh ground pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Peel avocado and mash with fork in a mixing bowl.
Blend in garlic.
Stir in lemon juice, salt and pepper.
Blend in onion. Using slotted spoon, blanch tomato in boiling water; remove and peel off skin.
Finely chop tomato and add to avocado mixture. Add chili pepper; blend thoroughly.
Cover with plastic wrap; refrigerate until ready to use.
Makes about 3/4 cup.
