Simmer onions and peppers, if you like, in skillet with small amount of butter and enough water to keep moist.

When onions are half cooked, add pieces of fish, precut into strips or squares. Fish will break into smaller pieces as it cooks, but real large pieces of fish don't work well.

Season with garlic powder and hot spice seasoning. (I used garlic salt and Seafood Magic.) Keep moist by adding water.

Cook over medium-low heat for 10 to 15 minutes.

Serve over rice or pasta.
