Ground Meat Soup
Ground Meat Soup is an moderately easy dinner. Made with 1 lb. ground beef, 1 c. chopped celery, 1 c. chopped onion, 1 c. chopped bell pepper and 2 c. frozen mixed vegetables, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In a small amount of oil (canola), cook meat, but not brown. Add next 3 ingredients. Saute 2 to 3 minutes, just to wilt. Add onion soup and 1 quart water. Simmer for 15 to 20 minutes. Add mixed vegetables and 1 quart water. Bring to a boil. Add pasta. Cook 10 to 15 minutes. Add tomatoes and corn.
Cover and simmer 15 to 20 minutes. Adjust seasoning. Add water, if thinner soup is preferred.
