Grilled Marinated Chicken
Grilled Marinated Chicken is an moderately easy dinner. Made with 3 skinned, boned chicken breasts, split, 1 envelope italian salad dressing mix, 1/4 c. olive oil or salad oil, 1 pkg. (10 oz.) frozen broccoli spears, thawed and 1 large red bell pepper, cut into 6 wedges, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Place chicken breasts in shallow pan.
Combine salad dressing mix and oil.
Pour over chicken breasts; toss to coat well.
Cover; refrigerate at least 1 hour.
Place chicken on greased grill over glowing coals.
Grill, uncovered, 15 to 20 minutes or until chicken is tender, brushing frequently with marinade.
Remove from grill. Place vegetables on grill; turn frequently until just crisp, about 3 minutes.
Place romaine lettuce on serving platter.
Arrange chicken breasts on lettuce with broccoli and peppers.
Sprinkle with lemon juice and pepper if desired.
