Green Rice
Green Rice is an moderately easy dinner. Made with 2 c. uncooked rice, 4 c. boiling water, 2 1/2 tsp. salt, 6 tbsp. oleo or butter and 1/4 c. minced parsley, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine rice, water, salt and oleo and cook in tightly covered saucepan over low heat for 30 minutes without removing cover.
Add parsley and almonds and toss lightly with a fork.
Good with chicken or roast gravy.
Serves 8.
