Green Enchilada Pie
Green Enchilada Pie is an moderately easy dinner. Made with 2 lb. ground meat, garlic to taste (optional), 1 medium onion, 2 c. grated cheese (1 c. each grated jalapeño cheese and cheddar) and 2 cans cream of chicken soup (or 1 each of chicken and mushroom), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Brown meat slowly.
Season with salt, pepper and garlic.
Add onions and cook until soft.
Add chilies.
Add soup with 2 cans of water and let simmer.
Dip tortillas in hot butter to soften. Arrange in layers with cheese on top.
Heat until cheese is melted in 350° oven.
