Grapefruit Frosting
Grapefruit Frosting is an moderately easy dinner. Made with 1 1/2 c. sugar, 2 egg whites, 1 tbsp. light corn syrup, 1/8 tsp. salt and 1 tbsp. grated grapefruit rind, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine first 5 ingredients in top of a double boiler. Beat at low speed of an electric mixer for 30 seconds or just until mixed.
Place over boiling water.
Constantly at high speed for 7 minutes stiff peaks form.
Remove from heat.
Add grapefruit rind vanilla.
2 minutes or frosting is thick enough to spread.
Makes 3 3/4 cups or enough for 1 (2 layer) cake.
