Ginger Pickles
Ginger Pickles is an moderately easy dinner. Made with cucumbers, 2 c. salt, 1 gal. water, alum (size of walnut) and 1 tbsp. ginger, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Slice the cukes thin and cover with cold water in which the salt has been dissolved to 1 gallon of water. Soak 8 days. Drain and rinse in cold water.
Add the alum to cukes. Cover with water and boil 1/2 hour. Drain and cover with water. Add the ginger and boil 1/2 hour. Drain and add the remaining ingredients. Boil until clear, about 1/2 hour. Can.
