Ginger Cream Dressing
Ginger Cream Dressing is an easy dinner. Made with 1 tbsp. cornstarch, 2/3 c. pineapple-orange juice, divided, 2 tbsp. minced crystallized ginger, 2 tbsp. lemon juice and 3/4 c. vanilla nonfat frozen yogurt, softened, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine cornstarch and 2 tablespoons pineapple-orange juice in a small saucepan; stir until smooth.
Add remaining pineapple-orange juice, ginger, honey and lemon juice; stir well. Cook over medium heat until thickened and bubbly, stirring frequently.
Remove from heat and transfer to a small bowl.
Cover and chill.
Stir in yogurt just before serving.
Serve with fresh fruit.
Yield
1 1/2 cups.
