Ginger Beer
Ginger Beer is an moderately easy dinner. Made with 2 lb. granulated sugar, 2 chilies, 3/4 oz. compressed yeast, 3 or 4 lemons (according to size) and 3 qt. boiling water, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Dissolve the yeast in a little warm water with a teaspoon of the sugar.
Place the sugar and chilies, the thin rind of the lemons with the juice in a large pan and pour over them the 3 quarts of boiling water.
Add the cold water when all the sugar has dissolved, and then add the yeast.
Allow to stand for 24 hours.
