German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 4 or 5 medium-sized potatoes, 10 strips bacon, 1 tsp. flour, 1/2 c. cider vinegar and 1/4 c. finely shredded onion, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Boil, peel and slice potatoes.
SautΓ© bacon until crisp.
Remove bacon; drain off except 3 or 4 tablespoons of drippings.
Mix together flour, cider vinegar, onion, water, sugar and salt to simmering.
Put hot potatoes into vinegar mixture and stir until they appear glazed; they should not be dry.
Crumble bacon and stir into salad.
Adjust seasonings.
Top with sliced eggs.
Let stand several hours or overnight to blend.
Reheat or serve chilled.
