German Cookies
German Cookies are dark, spiced molasses cookies made with sorghum, shortening, eggs, ginger, soda, vanilla, and flour. The chilled dough rolls into walnut-sized balls that bake into soft cookies with lightly cracked tops.
Mix the sugar, shortening, sorghum, eggs, and vanilla until smooth.
Stir in the flour, ginger, baking soda, and salt to make a soft dough.
Cover and chill the dough overnight.
Shape the dough into walnut-sized balls and press each one with a fork to make a cross pattern.
Bake in a moderate oven for 10 to 12 minutes, removing the cookies while still soft so they settle as they cool.
