Georgia Cornbread Salad
Georgia Cornbread Salad is an moderately easy dinner. Made with 1 (6 oz.) box cornbread mix, 1 (12 oz.) pkg. bacon, 1/2 c. sweet pickle relish, 1/2 c. sweet pickle juice and 3 large tomatoes, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Prepare cornbread according to package directions.
Cool; crumble into very small pieces.
Cook bacon; drain and crumble or chop.
In large glass bowl, layer half of the cornbread; top with half of pickle relish, juice, tomatoes, pepper, onion, bacon and 1/2 cup mayonnaise.
Repeat layers, reserving small amount of tomatoes and bacon for garnish.
Refrigerate; serve chilled. Yields 12 servings.
