Gazpacho

Gazpacho is an moderately easy dinner. Made with 1/4 c. minced green onions, 1 c. thinly chopped cucumbers, 1 minced clove garlic, 1/2 c. chopped green pepper (optional) and 1 large can tomato juice, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Put veggies in food processor or blender and blend to desired chunkiness, not too fine.

Add juice, Tabasco and vinegar and mix. (I just pour veggies into pitcher/container and add liquid.) Chill very well.

Serves about 8.
