Gazpacho
Gazpacho is an easy dinner. Made with 4 c. peeled and chopped tomatoes with juice, 2 c. peeled and chopped cucumbers, 3/4 c. diced green peppers, 3/4 c. minced onions and 2 c. v-8 juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine the first five ingredients.
Blend 1/2 of this in your processor.
Recombine the two batches.
Add 1/3 cup olive oil, 3 tablespoons cider vinegar, salt and pepper to taste.
Other additions are Tabasco, diced jalapeΓ±o, chopped green chiles or red pepper flakes.
Chill very thoroughly.
Serve with an ice cube in each bowl.
