Gazpacho
Gazpacho is an moderately easy dinner. Made with 6 to 8 large, meaty tomatoes, diced, 1/2 c. each: diced cucumber, green onion, celery and green pepper, 1 (10 oz.) can beef broth, pinch of basil and dill weed and 2 cloves garlic, mashed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
