Gazpacho

Made with 4 c. v-8 juice, 1 tomato, skinned, seeded and chopped, 1 cucumber, seeded, skinned and chopped, 1 carrot, grated and 1 bell pepper, seeded and finely chopped, this recipe delivers authentic, satisfying flavors. Divide juice between 4 bowls.
Do same with all vegetables. Chill until serving time.
Just before serving, swirl 1 ounce sour cream into each serving.
