Gazpacho is an moderately easy dinner. Made with 3 fresh tomatoes, 1 medium cucumber, 1 bell pepper, 1 onion and 1 (48 oz.) can tomato juice, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Coarsely chop tomatoes, cucumber, bell pepper and onion. Combine in a large bowl.
In an electric blender, blend tomato juice, cloves, olive oil and vinegar.
Add to chopped mixture. Serve with warm tortillas topped with melted cheese.
