Gayle Ann's Almond Burgers
Gayle Ann'S Almond Burgers is an moderately easy dinner. Made with 2 c. cooked brown rice, 1 c. almond meal (ground almonds), 2 to 4 tbsp. soy sauce or a mixture of water and soy sauce, 1 egg and 1/2 onion, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Combine rice and almond meal.
In a blender, mix soy sauce, egg, onion and cheese.
Pour this over rice and almond meal.
Mix thoroughly with the fingers until an even consistency is reached. If desired, add 1/4 cup minced parsley.
Mix, then shape the mixture into burgers and fry them in a tiny bit of oil, preferably on a griddle.
They cook fairly rapidly and brown nicely.
Cook over medium heat until browned, about 5 minutes on each side. Serve on whole wheat buns with lettuce, tomato, sprouts and raw sweet onion rings.
Makes 6 burgers.
