Garden Casserole
Garden Casserole is an impressive dinner. Made with 1 large onion, sliced, 1 medium sweet red pepper, cut into strips, 6 small baking red potatoes (unpeeled), sliced, 2 c. (8 oz.) shredded swiss cheese and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Saute onion, red pepper strips and garlic in oleo until crisp-tender.
Add flour; cook 1 minute, stirring constantly. Spoon half of the onion mixture into a lightly greased 13 x 9 x 2-inch baking dish.
Layer half each of the potato slices, green beans and cheese.
Repeat layers of onion mixture, potatoes and green beans.
