Grate zest from orange slice flesh and put into casserole with zest, apples, onion, celery, apricots, spice and 2 tablespoons of the vinegar.

Mix mustard with honey and remaining vinegar. Spread over ham and place in casserole.

Cover tightly, cooking about 2 hours (or as specified on ham package) at 325Β°.

Remove ham.

Keep warm.

Press contents of casserole through sieve and reheat sauce gently in saucepan.

Pour sauce into sauce boat. Serve with ham.
